Alfresco Mediterranean Salad

INGREDIENTS:

Dressing:

1 tablespoon lemon juiceBroccoli-Salad
½ teaspoon salt
¼ cup pistachio oil
¼ cup pine nut oil

Salad:

3 tablespoons salt
2 cups broccoli florets
1 ripe avocado
¼ cup pistachios chopped

DIRECTIONS:

In a small jar combine lemon juice salt and oils – shake well.

Prepare a large bowl of ice water.
Bring a large pot of water to a boil, add some salt and broccoli.
Boil 3 – 4 minutes, drain broccoli and plunge florets into ice water. Drain again.
Peel the avocado and slice evenly and place on a platter place around the broccoli.
Sprinkle with pistachios.
Drizzle with lemon and oil mixture, infuse and serve.
